Stuffing Inspired Sourdough Bread

As is the case with many of our beloved original recipes, this uniquely inspired sourdough bread stuffing came to life after Megan experienced a 2 a.m. epiphany in the kitchen while baking and the results were nothing short of extraordinary.

Ingredients:

·         460g bread flour

·         340g water

·         9g salt

·         100g starter

·         Half an onion (Approx 150g)

·         1 Stalk of celery (Approx 65g)

·         1 Tablespoon butter

·         1tsp poultry seasoning

·         (Optional - Sub half of water for low sodium chicken broth & reduce salt by half)

Directions:

·         Puree onion & celery. Sauté until cooked (5-7 mins) in 1 tablespoon of butter & poultry seasoning.

·         Let onion & celery puree cool down.

·         Mix your sourdough loaf as normal. (Starter, water, flour & salt) & add onion & celery puree.

·         Complete 4 sets of stretch & folds, shape & proof

·         Bake @450 20mins steams 25-30 mins no steam
